This is my only and favourite recipe for cookies. I've torn up all my other recipes for cookies as this just dominates them by a mile. A sweet but chocolate-focused punch in the mouth. I've said it before and I will say it again --- my wife inhales these like they're going out fashion.
Combine the butter, white sugar and brown sugar with a spatula until it creamed into a paste.
Add the rest of the ingredients except the chocolate chips and mix until the flour has been absorbed.
Once the cookie dough has formed, add the chocolate chips and slightly knead through.
Using a spoon, scoop portions of the dough and roll them into balls. Place on a plate and refrigerate for 30 minutes uncovered. In this time, preheat your oven to 160°C/320°F.
Remove the cookie balls and place 4 on a tray lined in parchment paper and bake for 18 minutes or until slightly crisp on the edges.
Transfer from the oven to a wire rack and allow to cool. Do not touch them while they are hot as they will be soft and will harden as they cool.
Congratulations, you made the best cookies. HAGFD.

1. Placing them in the fridge first allows them to form composure when baked. This way it doesn't drop and spread like a droopy mess.
2. Do not place too many on the tray at once! They will spread and merge into one wonky looking cookie.
